Lunch is to be the next largest meal of the day.

Here are some of our favorite foods for this meal.

I.                  Scalloped Potatoes

Slice up 8 large  potatoes

Layer potatoes

On each layer sprinkle the following items:

¼ tsp Salt

¼ tsp Onion powder

1 Tablespoon Food yeast flakes

½ tsp Chick-nish seasoning

Pour soy or rice milk over the potatoes. Cover well to avoid burning.  Make sure it is without any vanilla flavoring.

Bake at @ 350 degrees for 35-45 minutes


   Spinach  Zucchini Tofu Lasagna

This is the top favorite at any potluck. We use it in every family celebration. (The recipe comes from my cousin Clyde Sample)


Tomato Sauce (You make it yourself or use Priego garden sauce without spice)

1 Cup cooked chopped spinach

Cashew pimento sauce

Tofu filling

9-12 Strips of Wheat semolina  lasagna noodles. Cook in wide pan boiling 15 minutes.  Avoid buying egg pasta

 Serve with salad, bread and olives. Use Almondase for salad dressing. I will show you how to make that in a few minutes.

Here is the order of the LAYERS of lasagna


1.      Tomato sauce

2.      Noodles

3.      Spinach

4.      Tomato sauce

5.      Noodles

6.      Tofu filling

7.      Home made “Cheese”

8.      Noodles

Tomato Sauce (Or just use Prego )

1 chopped onion

½ Cup chopped green pepper

16 oz jar or can of stewed tomatoes

1 tsp salt

¼ tsp sweet basil

¼ tsp oregano, whole (use less if ground)

Simmer onion and green pepper in a small amount of water until tender. Add next 6 ingredients and simmer for 20 minutes. (make two recipes for lasagna if you like lots of sauce.

Tofu Filling

1 pound block of Tofu, mashed

1 ½ tsp chives

¾ teaspoon Garlic powder

1 t onion powder

 ½ Oregano, ground

1 1/3 tsp Sweet Basil

1 ½ tsp lemon juice

1 ½ tsp salt

1 C Onion, chopped sautéed  (or onion powder)

Mix together and use as filling for lasagna


"Tofu Cheese topping"

Into blender combine

1 1/2 tsp salt

1/2 tsp dill weed

1/4 garlic clove

1 pkg.of tofu mori-nu silken sealed package. Discard water out of box and place tofu in blender.

1 little tiny jar of canned red sweet peppers (pimento) (adds color)

1/4 cup of sesame seeds (provides rich cheesy flavor) Hint: (Whiz this one first and it will end up smoother.)

2-3 Tablespoons of nutritional yeast flakes (great cheese flavor)

1 tsp Bills chicken ish seasoning

1 hot boiled potato (helps thicken and adds volume to sauce)

1 tsp lemon juice concentrate (helps thicken)
