Breakfast is to be the biggest and best meal of your day for a healthy heart and brain.

Tofu: Tofu is a product made out of soy beans

 

1Tablespoon olive oil onto fry pan

•1 Block firm Tofu

•½ tsp salt

•½ tsp sweet Basil

•½ Tablespoon Chick-nish seasoning

•½ Tablespoon Food yeast flakes

•Ό tsp Onion powder

•Ό tsp Garlic powder

Optional: Sweet bell pepper, red or yellow for nice color. It can be served with other things like toast, and a vegetable. ( or a fruit if you wish)

 

Oat & Almond Pancakes

•Ύ Cup Almonds (whizzed into powder)

•4 Cups Oats (Whized into fine powder)

•1 tsp. Salt

•3 Tablespoons Honey

•½ Cup Whole Wheat

•1 ½ Cups WATER

 •Fry in olive oil. Using small pancakes, the tendency for break up is less.

•Makes 20      small size pancakes

 

Using Waffle Iron for the same recipe.

Better Butter

BETTER BUTTER is a great spread that even melts like butter on hot toast. It is very simple to make. It does not have added chemical preservatives which could cause cancer. It is quick and easy to make.

•½ Cup Cooked lightly salted Cornmeal

•½ teaspoon Salt

• 1 Tablespoon Olive Oil

•2Tablespoons Water

•Blend on fastest speed for 5-10 minutes till the texture is creamy.

•Chill 2 hours for nice firm texture.

•(If children are over weight, use only 1 teaspoon olive oil instead of 1 Tablespoon)

  Here is how you cook the corn meal:

•To cook the cornmeal,

• place 1 cup of fine cornmeal in 4 cups water with 1/2 tsp salt

• mix well

• Simmer for 15 minutes on medium low heat.

 

 

Whole 3 Grain Cereal

•2 Cups Brown Rice

•1 Cup Wild Rice Mix

•½ Cup Millet

•1 Cup Whole Wheat Grain

•12 Cups water

•Seasonings: 1-2 teaspoon salt

•1 Tablespoon sweet basil

•1 tsp. Onion powder and a pinch of garlic

•Cover, and boil on low heat for 1 hour. Stir every 10 minutes to prevent sticking.

•Feeds a large family of 6, with teenagers.

•(Optional: Add in Red sweet pepper for color)

Comments: This 3 whole grain cereal provides a variety of B vitamins and proteins for growing healthy brain cells. We eat this a lot in our home.

 

Treat: Gracie, Zoe and Hayden's favorite treat:

Peanut Butter Carob Treats

•Ύ Cup Peanut Butter

•½ Cup Maple Syrup or Honey

•12 Teaspoon vanilla

•1 Cup Whole Wheat Flour

•1 Cup Quick cooking oats

•Ό teaspoon salt

•1 Cup sweetened Carob Chips

Peanut butter Icing:

•Ό Cup smooth peanut butter

•1 Tablespoon Tofu Milk powder (or other powdered soy, rice milk)

•2 Tablespoon honey or maple syrup

•Ό teaspoon of vanilla
1-2 Teaspoon of soy milk for desired consistency
•1. Cream together peanut butter, honey and vanilla. Add salt and flour and mix. Add oats last and mix well. You may have to use your hands. Spray a 9”X13” banking pan with non stick vegetable spray. Spread peanut butter mix evenly in pan and bake.

•@350 for 12 minutes.

•Watch closely to prevent over browning

2. Sprinkle carob chips evenly over hot cookie crust. Let chips stand until they are melted. When chips have melted, spread them evenly over cookie layer with table knife or spatula. Set aside to cool.

3.Prepare peanut butter icing by placing all ingredients in a small bowl and mix well.  Spread over cooled carob or mix it in while it’s still warm. When cool, cut in small pieces and serve warm or room temperature.
