No Bake Carob Cookies

Try these delicious no bake carob drop cookies. My mom made these when I was a little grade school girl. I remember coming home from school to find cookies on the counter cooling. They are so good and bring back so many memories of home.
Recipe

1 1/4 C Boiling water

1/2 C cashews washed in boiling water (Or use 1/2 cup blended up cooked cornmeal also called polenta)

1/2 tsp salt

2 Tablespoons  Coconut milk (A taste of Thai: unsweetened juice of coconut meat)

8 to 10 Tablespoons cooked tapioca

1 Cup Rice milk or soy milk

1 Tablespoon vanilla powder

1/2 c maple syrup

2 C coconut flakes

2 Cups carob chips

1 C Almonds whizzed fine

3 cups oats

Pix and pour into pan and chill then cut into squares or

use ice cream scoop and mound up on cookie sheets to cool.
