Peanut butter cookies:

1/4 C honey

2 Tablespoons olive oil

1/2 tsp vanilla powder (using powder avoids the alcohol)

1Tablespoon gluten flour

1/4 tsp salt

1Tablespoon sunflowers (ground up)

1/2 C whole wheat flour

1/2 Cup Barley flour or millet flour

2-3 Tablespoons Peanut butter

2/3 Cup Date pieces softened by boiling in 1/2-2/3 cup water

Directions: stir well, shape into round balls then gently push down to 1/4 inch high with 3 fingers or a fork. This will make a nice round shape to cookies.

If using this for a fruit pizza, find a good size round pizza sheet or make on a square sheet just in a circle. Spray the pan first with olive oil or PAM or vegetable spray. Expect not to be able to transfer the fruit pizza crust once it is made. It breaks easy. Plan to serve on pizza pan. Wipe the handles clean before baking.

Bake at 300-350 for 10-15 minutes
