Maple Walnut  Pecan Cookies

In food processor or BLENDER place all these ingredients together on high for 5 minutes till very smooth.

1 tsp orange peel

1/3 cup flax seed soaked for 16-20 hours (has a jell like consistency around seeds and works like an egg for making moist smooth texture of finished cookie)

1 T carob powder

1 T Sesame seeds

½ c  plus 2 Tablespoons maple syrup

2 tsp powdered vanilla

1/4 c water

1/3 c pecans

Place in a bowl and Add:

2 ½ cups walnuts (chopped fine)

½ c oats

2/3 c WW pastry flour

DROP ON sprayed cookie sheet

Bake at 350 in preheated oven for 10 minutes (watch closely for it burns easy)

 

NOTE:

Flax seeds soaked 16-24 hours are ready to sprout and release more vitamins for the cookie. It has a jell like consistency around the seeds and works like an egg for making moist smooth texture of finished cookie. One could just blend it up into a powder without soaking but the seeds release more enzymes and vitamins when soaked first.

Walnuts have omega 3 fatty acids in the highest amounts over all other nuts. In 100 grams all nuts have a trace but walnuts are  highest in Omega 3 and 6

There are also initial reports that omega-3 fatty acids may lower the risk of dementia in old age.
