ALMOND
JOYS
3 C fine coconut
1 C ww pastry flour
1/4 t salt
1 t vanilla
2 T oil
1/4 C honey
1/2 C water
Mix dry ingredients. Add wet ingredients at once. Mix well. Press
dough finrmlyi nto papers in muffin tins, filling half full. Press 2 almonds on
top. Bake 300 til golden, about 15 min.
Topping: Melt 1 C carob chips, 1 t vanilla, 1/2
C peanut butter. Add 3 T water and mix in well. Spoon over top and cool.
(used the small muffin cups so were small enough could only put one almond on
top)
