Fruit Pizza is really fun. You put your cookie together on a pizza pan, cover with creamy topping then decorate. Rainbow circles are the favorite in our home. Red starts the outer row and you work in to the center. If you do not have a purple enough of a fruit, find pansies they really look great. We like using this fruit pizza as a family celebration item when God has done something wonderful for us. 
Cookie mix: Choose your favorite. This is different each time for us but here is a favorite. Peanut butter cookies are also good. I will list that recipe next.

2/3 Cup Almonds blended up very smooth in 1 Cup boiling hot water

2 peeled, cored, apples whizzed in blender

1/2 Cup dates whizzed smooth in blender

1 tsp Ground Cardamom

1/4 tsp Ground Coriander seed

1 tsp Vanilla powder

1 Tablespoon of gluten flour

1/2 cup barley flour

2 Cups oats

1 Cup raisins

2 Cups Carob chips

Mix all ingredients together and let cookie dough set for 20 minutes then spread out over big pizza pan sheet that has been sprayed with vegetable oil. Bake at 425 degrees for 15 minutes then turn down to 325 degrees Fahrenheit  for five to ten minutes.

Topping: Use Tofu whip cream recipe found on page with pumpkin pie. Spread this over the cooled cookie.

Sometimes I have added the lemon pudding mix (Mori-nu Mates) to the tofu whip cream and this really added a fun flavor. (This contains cane juice, honey , soy lecithin, vanilla, lemon, oat malt, but has no dairy products.)

Next comes the fun part. Decorate with many colors of fruits. We used in this picture, strawberries, peaches, mandarin oranges, bananas, kiwi, and blueberries.

This is a family favorite. The homeschoolers love to make this one.
