Carob Cherry Cheese Cake
This delicious pie takes 10 minutes to make if you have all ingredients. It takes 2 hours to set up. It tastes so good, you never have any left over. (Unless you leave something out by forgetting or you just do not have it on hand.) No one will believe it is made with tofu. It's best not to tell them till they decide how good it is. The name tofu makes many not even want to try it.
2 pkg. Tofu Mori-nu silken Medium firm organic tofu
1/2 tsp salt
2 1/2 heaping tsp. vanilla powder (liquid works but powder avoids alcohol)
3 heaping tsp. Kosher jel (Plain Par eve gelatin, unflavored, unsweetened)
3/4C date pieces for sweetener (May use 1/3 c honey)
1/8 tsp ground Cardamom (An excellent herb replacing harmful cinnamon irritant and stimulant)
1/8 tsp. ground Coriander powder (used with Cardamom for cinnamon replacement)
1 3/4 C water
2 heaping tsp. carob powder (An excellent replacement for chocolate which has many harmful stimulants plus animal waste materials.)
Place all ingredients except the tofu into a little kettle and bring to a boil. Do not let it boil more than one minute. The gel will begin to burn. Next place all in the blender and blend till creamy. Sometimes during the making of this pie, you decide you really should have two pies, If you need to make two pies, just add another tofu package and a pudding mix. It will jel up fine.
Optional: To make extra creamy and rich, add in a package of vanilla non dairy pudding mix which contains: dehydrated raw cane juice, sucanate dehydrated honey, oat flour, potato starch, vanilla powder, soy lecithin. Found in food chains such as Fred Meyer nutrition center. It is Called "Mori- nu Mates".
Crust: Your favorite graham cracker crust, or use a sprinkling of grape nut cereal on the bottom, or make your own crust.
I like this one from the Benton Sisters cook book volume I (For 9 inch pie)
1 1/3 c almonds, ground
2 c. quick oats blended fine
1 tsp salt.
1/t tsp almond extract
4 Tablespoons honey
4 Tablespoons water.
Mix all ingredients then press into pan. Bake for 10 minutes at 350 degrees. Make sure filling is cooled a little and setting up when you place into your crust for better looks.
Topping: Bright colors are so attractive on this desert. Use one Quart pie cherries and thicken with 1Tablespoon corn starch and sweeten with 2T. honey, or buy a can of pie cherries ready for pies. Place this on top of the cooled, jelled pie after it has set for 2 hours or best overnight. Serve cold. Red is the best color on brown. Fresh strawberries would be good, thickened. However we have used thickened blueberries.

|Another cheese cake recipe
3T Emes Kosher Jel
1 C frozen pineapple juice conc.
1/4 c frozen orange juice concentrate
1/3 c honey, rounded
1/2 c cashews (washed in boiling water)
2 pkg tofu Morinu firm
1/2 tsp Salt
1/2 tsp Lemon Juice
2 Tsp. Vanilla
1 c Coconut milk
Heat concentrates with Kosher jel to dissolve jel. Add cashews and blend till smooth. Add all ingredients and whiz till smooth. Pour into prepared pie crust. Chill 2 hours. Top with blueberries or other berries.
MAPLE CHEESE CAKE
Same as above ony replace honey with maple syrup and use maple flavoring instead of vanilla.
