The cornbread recipe must have flown off
to never- never land because I couldn't find it in my sent items.
Here it is and cornbread rolls too.
Yeast Cornbread
2 1/2 c milk
2 1/2 T yeast
1/4 c oil
2 c flour. Half wheat and half
white is tasty
1 t salt
2 c cornmeal
Mix well and spread in 8x10 oiled pan.
Let rise to double, then bake @ 400 d.for
about 25 minutes.
My father-in-law used to make the
following cornmeal
buns that everyone really liked.
Cornmeal Buns
Cook the following stirring constantly
till thick, then cool
to warm.
1 c cornmeal
1/2 c oil
2 t salt
1/4 c honey
2 c milk
When nearly cool enough, mix 1 T yeast
into 1/2 c
warm water
Add this and about 4 1/2 c flour. mix in
with hands. It
will seem too thick at first, but will
mix in when you keep
on mixing it. Form into about 30
rolls and place on an oiled
cooky sheet. Put in a warm place to
rise to double in size,
then bake at 400 d. for 15 to 20 minutes.
I used to make these recipes before
the very quick yeast came along. You may need to do some
adjusting for the quick acting yeast Could probably just
put it in dry, adding the water that it would have been mixed into
the total liquid. We liked this one very much. Must make
it again.
