Easy Simple Date and Raisin rolls |
3 C warm water
1/2 c honey 1/2 cup olive oil 1 Tbsp redstar instant yeast 2 Tablespoons Barley flour or cooked barley 3 1/2 Cups whole wheat flour (best fresh ground whole wheat) 3/4 Cup Do pep also called gluten flour Beat well or place in bread mixer for 20 minutes of processing on "dough" setting. Then add 2 teaspoons salt. Knead another 5-10 minutes. Let rise again and form into 2 sections. Do each section this way: Place flour on a smooth surface then spread the one section of dough out flat and thin. Place 1/2 cup of water softened date pieces and 1/2 cup softened raisins on top. (optional: add finely ground almonds over the dates and raisins and another 1/2 cup of softened dried cranberry "craisins") Next, roll the bread and take the long tube of date filled dough making it placed in a circle. With a knife, cut from the outside edge 3/4 of the way through. Then take each piece and gently turn it. Let it rise as high as you want it to be after baking. (about 15 minutes) Find a warm place for the bread to rise. Cover with a moist clean linen and remove slowly when ready to place in oven or your bread will fall. Preheat oven to 350 degrees. Bake for 14 minutes. Then turn oven down to 300 for another 30 minutes. Recipe makes two RINGS of Date rolls. |
