To save time, these potatoes can be baked early in the morning and later for lunch they are cool and can be halved, scooped out and the contents whizzed into mashed potatoes. Flavor the mashed potatoes and water with salt, and chicken like seasoning. (I use Bills Best Chick-nish seasoning. It does not have any dairy products or MSG which can cause headaches.) |
For a large family of six with teenagers, we use 8 huge
potatoes. Bake them whole. Halve, and scoop out the potato. Bake the skins
for 5 minutes to firm them up. (Temp 400 degrees)
Whip up the mashed potatoes and return them to the "boats" very carefully. Taste to make sure the flavor is just right. Then decorate. We use a fake cheese that we make. Fresh slices of zucchini are slid into the meat of the potato so just the green rim shows. Then olives and bake for 10 minutes or until golden. "Tofu Cheese topping" Into blender combine 1 1/2 tsp salt 1/2 tsp dill weed 1/4 garlic clove 1 pkg.of tofu mori-nu silken sealed package. Discard water out of box and place tofu in blender. 1 little tiny jar of canned red sweet peppers (pimento) (adds color) 1/2 cup of sesame seeds (provides rich cheesy flavor) Hint: (Whiz this one first and it will end up smoother.) 2-3 Tablespoons of nutritional yeast flakes (great cheese flavor) 1 tsp Bills chicken ish seasoning 1 hot boiled potato (helps thicken and adds volume to sauce) 1 tsp lemon juice concentrate (helps thicken) |
