Our vegan vegetarian spinach lasagna is very popular at potlucks and a favorite with children and teens.

The layers can be done in different orders yet this is how our children put this one together.

Get 9 strips of wide lasagna and a nice deep, large baking pan. We cook the lasagna strips first. When the water is hot, we add the lasagna and boil for 15-20 minutes. When these are cool enough to handle the process can begin.
The first item that goes into a baking dish is the tomato sauce. We select a sauce already  made which does not contain any animal products. We check the label to make sure there are no irritating spices such as hot pepper. The pepper irritates the lining of the whole digestive tract. Over time, these irritations turn into sores called ulcers. Then over a longer time, they can develop into cancer. 

Layer in large baking pan as follows:

Tomato sauce

Noodles (Lasagna strips)

Spinach (fresh, washed or frozen, thawed)

Tofu Filling

Tomato Sauce

Noodles (Lasagna Strips)

Tomato Sauce

Melted Cheese Sauce (tofu cheese recipe: See Potato boats)

Bale at 350 F for about 1 hour.

Serve with salad, bread and olives.

Serves 6-20 depending on how big your pan and layers

Tofu filling:

1 block of firm tofu, mashed. (These tofu blocks are now sold in different sizes. Water surrounds the block and it is hard to tell by weight when purchasing. Dry weight of 14-16 oz is the amount referred to)

3/4 tsp. garlic powder

1 tsp. onion powder

1/2 tsp. oregano powder

1 1/4 tsp. sweet basil

1 1/2 tsp. lemon juice

1 1/2 tsp. salt.

 1 Cup onion, chopped and sautéed

Mix together

"Tofu Cheese topping"

Into blender combine

1 1/2 tsp salt

1/2 tsp dill weed

1/4 garlic clove

1 pkg.of tofu mori-nu silken sealed package. Discard water out of box and place tofu in blender.

1 little tiny jar of canned red sweet peppers (pimento) (adds color)

1/2 cup of sesame seeds (provides rich cheesy flavor) Hint: (Whiz this one first and it will end up smoother.)

2 Tablespoons of nutritional yeast flakes (great cheese flavor)

1 tsp Bills chicken ish seasoning

1/2 cup cooked corn meal     (OR  use 1 hot boiled small potato for  thickening)

1 tsp lemon juice concentrate

Makes 3 cups tofu cheese
