Pecan Loaf

Up Gluten Stroganoff Cari Puffs Meatless Balls Italiano Manicotti Pecan Loaf

Recipe for small family of 4. We double this for family of 6 with 3 teenagers.


1/2 C garbonzo puree (another name is chick pea)

1/2 c water

1 c Bread crumbs (Master's best with sunflower seeds makes a great tasting loaf)

1 Cup cooked brown rice (seasoned with salt)

1 onion chopped and whizzed so texture is not detected by onion haters

1/2 hot water

1/2 Pecan pieces (whizzed fine)

1/2 C sunflower seeds blended fine

1 tsp marjoram

1 tsp thyme

1/2 tsp salt

Combine all ingredients. Let it stand for 5 minutes. Pres into sprayed loaf pan. Bake at 350 degrees for 45-60 minutes.  Also this makes great sandwich spread.

Tip pan upside down and let it fall onto serving platter. Surround with pretty white mashed potatoes and serve with cranberry sauce or with tomato sauce.

This can also be used as a nutritious sandwich spread for lunches.
